Fine de claire

This is the favourite product for consumers who prefer a less fleshy oyster. They mature for several weeks in the ponds - this enables them to strengthen their shells unlike those raised in the sea. It’s during this period that the unique taste will be acquired in addition to its brine flavour. It is a light oyster, well balanced in flavour and rich in water.

Maturation

They mature for a minimum of 28 days
with a maximum density of 3kg per square metre between November and March.
The “fine de claire” has a homogenous shape, is not fleshy, its “coat” is translucent and its gills green or white; the taste has a good balance of salt and local “terroir”; the consistency is slightly soft and length in the mouth is short.
